Recipe: Soft-Shell Crab Poor-Boy

Time: 30 minutes

1 12- to 16-inch-long loaf supermarket French- or Italian-style bread, or 2 smaller loaves
1 egg
1 cup milk
1/2 cup cornmeal
1/2 cup flour
1/2 teaspoon cayenne, or more
Salt
Neutral oil, like corn or grapeseed, as needed
2 large soft-shell crabs, cleaned
For garnish: mayonnaise, lettuce, tomato, hot sauce or lemon.

1. Heat oven to 350 degrees. Split bread in half and remove some of the soft white crumb with your fingers. Toast bread lightly in oven, about 10 to 15 minutes.

2. Beat egg and milk together in a bowl; combine the cornmeal, flour, cayenne and a large pinch of salt on a plate. Put about 1/4-inch of oil in a deep skillet broad enough to accommodate crabs, and turn heat to medium. When oil is hot — a pinch of flour will sizzle — dip crabs in milk-egg mixture, then dredge in the cornmeal-flour mixture. Put in skillet; adjust heat so crabs bubble gently but not furiously in oil.

3. When bottom is nicely browned, 3 to 5 minutes, turn crabs and brown other side; crabs will be quite firm when done.

4. Serve on toasted bread, garnished as you like.

Yield: 2 servings.

He had read in the morning newspaper that a ladies' art guild was having a hanging of its paintings in Pirate's Alley. Imagining that the paintings would be offensive enough to interest him for a while, he pushed his wagon up onto the flagstones of the Alley toward the variety of artwork dangling from the iron pickets of the fence behind the Cathedral. On the prow of the wagon, in an attempt to attract business among the Quarterites, Ignatius taped a sheet of Big Chief paper on which he had printed in crayon: TWELVE INCHES (12") OF PARADISE. So far no one had responded to its message.

The Alley was filled with well-dressed ladies in large hats. Ignatius pointed the prow of the wagon into the throng and pushed forward. A woman read the Big Chief statement and screamed, summoning her companions to draw aside from the ghastly apparition that had appeared at their art show.

"Hot dogs, ladies?" Ignatius asked pleasantly.

The ladies' eyes studied the sign, the earring, the scarf, the cutlass, and pleaded for him to move along. Rain for their hanging would have been bad enough. But this.

"Hot dogs, hot dogs," Ignatius said angrily. "Savories from the hygienic Paradise kitchens."

He belched violently during the silence that followed. The ladies pretended to study the sky and the little garden behind the Cathedral.

Ignatius lumbered over to the picket fence, abandoning the hopeless cause espoused by the wagon, and viewed the oil paintings and pastels and watercolors strung there. Although the style of each varied in crudity, the subjects of the paintings were relatively similar: camellias floating in bowls of water, azaleas tortured into ambitious flower arrangements, magnolias that looked like white windmills. Ignatius scrutinized the offerings furiously for a while all by himself, for the ladies had stepped back from the fence and had formed what looked like a protective little grouping, several feet from the newest member of the art guild.

"Oh, my God!" Ignatius bellowed after he had promenaded up and down along the fence. "How dare you present such abortions to the public."

"Please move along, sir," a bold lady said.

"Magnolias don't look like that," Ignatius said, thrusting his cutlass at the offending pastel magnolia. "You ladies need a course in botany. And perhaps geometry, too."

"You don't have to look at our work," an offended voice said from the group, the voice of the lady who had drawn the magnolia in question.

"Yes, I do!" Ignatius screamed. "You ladies need a critic with some taste and decency. Good Heavens! Which of you did this camellia? Speak up. The water in this bowl looks like motor oil."

"Leave us alone," a shrill voice said.

"I shall." Ignatius grabbed the handle of his cart and pushed off. "You women should all be on your knees begging forgiveness for what I have seen here on this fence."

"The city is certainly going down when that's out on the streets," a woman said as Ignatius waddled off down the Alley.

Ignatius was surprised to feel a small rock bounce off the back of his head.

this morning (Sunday) went to a newly opened branch of my bank (name witheld). They're open on Sundays 11 a.m. - 3 p.m. Checked my balance ($0.32) via ATM then walked into the branch. was about 11:15 a.m. They have a very nice coffee machine that will brew you a single serving of med. or small size. You drop the small plastic container into the machine, press what size of coffee you want and about a minute or two later you have a nice hot coffee. Then you just remove/discard the container that held the grinds. Though I have a "free" checking account, the bank charges $35 per overdraft (fee) plus if you are overdrawn for more than two days they will charge you $6 per day/maximum 5 days or an extra $30. Considering how much I've paid them in fees, think they should comp me a cup of coffee now and then.

Recipe: Shrimp Deviled Eggs

Time: 20 minutes

1/4 pound shrimp, peeled and deveined
4 eggs
2 or 3 tablespoons chopped good olives
1 tablespoon minced onion
2 tablespoons chopped parsley leaves, more for garnish
1 teaspoon Worcestershire sauce
1 teaspoon extra virgin olive oil
Salt and pepper to taste
2 tablespoons mayonnaise.

1. Bring a small pot of water to a boil. Add shrimp and cook until pink, about 2 minutes. Remove shrimp with a slotted spoon. Let cool a bit, then chop.

2. Add eggs to pot, adding water, if necessary, to cover. Bring water just to a boil, then shut off heat. Cover pot and let eggs rest for 9 minutes, 10 minutes if eggs are large. Plunge eggs into a bowl of ice water. When cool enough to handle, peel.

3. Halve eggs lengthwise and remove yolks. Mash yolks of 3 eggs in a medium bowl. Add chopped shrimp and remaining ingredients and mix well.

4. Mound this mixture into egg whites. Crumble remaining yolk on top and garnish with parsley. Serve, or cover with plastic and refrigerate for up to a day; bring back to room temperature before serving.

Yield: 4 servings.

Art gallery to get Jasper Johns prints

WASHINGTON — The National Gallery of Art is to acquire about 1,700 proofs from Jasper Johns, which would make the gallery the largest institutional repository of his works.

The purchase of Johns' lithographs, etchings, relief prints and screen prints will be completed by the end of 2008. The gallery does not release exact dollar values on its purchases, but this was a multimillion-dollar acquisition, said gallery spokeswoman Deborah Ziska.

"This important body of work will permit the gallery to organize exhibitions that offer an amazing representation of Jasper's distinctive printmaking oeuvre," Earl A. Powell III, the gallery's director, said in a statement. The announcement was to be made official on Tuesday.

The exhibition "States and Variations: Prints by Jasper Johns" will open at the gallery's East Building on Sunday and will run through Oct. 28. It includes eight works from the latest acquisition, Ziska said.

The collection includes nearly all the iconic images associated with Johns from the postwar era -- flags, targets, maps, large multi-panel abstractions -- and recent compositions with references to works by earlier artists. The gallery is acquiring Johns' working proofs, trial and experimental proofs, progressive and state proofs, as well as sketches made during the printmaking process.

"Printmaking is uniquely suited to tracking the evolution of an image's development through successive proofs," Powell said. "Jasper's proofs take this process to new heights. While some are primary interest in the context of the final image, others are beautiful as individual works of art."

Powell said Johns' approach has been highly influential for younger generations of artists.

"His work is essential to our understanding of the post-1960 revival of interest in print media," Powell said.

Went to the Philadelphia Museum of Art last weekend (pay what you want - $1) to see the Japanese Screen Show and the closing of the Thomas Chimes exhibit. After scoping out the two shows, went upstairs looking for the Dan Flavin installation but couldn't find the piece. (A.A. entry 1, A.A. entry 2)

According to the information desk, the fluorescent lights on the second floor are part of the construction that is going on there *not* an art piece. too bad. think Flavin himself would have been very pleased regarding the placement of the lights in the windows as seen from outside the museum during nightfall.

Just found out that the James Joyce Book Club (Book Corner**/Philly) has morphed into the Shakespeare Book Club... not sure if I'll continue to go.

Am currently reading the gospel of Luke. I have plenty of issues in regards to Christian theology but will start attending this weekly "Alternative Seminary" ... seems interesting.


Think someone should publish a bible where every "book" was its own hard cover being but small like a paper pocket book. The editon would sort of be like an encyclopedia series with large slip cases for both old and new testament. Would give more weight to them (gospels) by being presented as *separate* (yet part of a whole) which they were/are.

*couldn't find which actor, though think it is Michael York, who says this really fast on stage because the audience always expects it to be said very slowly and with great (over)emotion. Instead, that bit is over with quickly, in the blink of an eye... well so much for that. find that funny.

**just picked up A Confederacy Of Dunces by John Kennedy Toole. was in a brown bag of donated books outside that I noticed while sitting in the shade at one of their tables drinking coffee and smoking a cigarette. told one of the employees about it and he said I could snag a book, free of charge, if I wanted to... which I did.

Bloody Martini

Ingredients:

1 1/2 oz. Belvedere Cytrus (citrus flavored vodka)
dash of simple syrup
dash of lemon juice
dash of Tabasco
6 cherry tomotoes

How To Make It:

In a shaker glass, muddle the tomatoes with the lemon juice and simple syrup. Add the rest of the ingredients, and shake with ice. Strain into a chilled martini glass, and garnish with a cherry tomato speared with a basil leaf.

(1) recipe for Chilled Watermelon Soup with Blackened Shrimp and Cucumber

Ingredients:

16 large shrimp
2 tbsp Creole seasoning
6 cups diced, seedless watermelon
2 cups diced, seedless cucumber
2 tbsp ginger, minced
2 tbsp shallots, minced
1 can coconut milk, unsweetened
2 tbsp chili paste
1/4 cup sugar
(to taste) salt and pepper

Method of Preparation:

Blend cucumbers and melon together until smooth and pour into mixing bowl. Blend remaining ingredients and whisk into cucumber/melon mixture. Cover and refrigerate for 4 to 8 hours. Season shrimp and grill, saute or broil them, and garnish individual bowls of soups with them.
