recipe:

Fiery Garlic Salmon

This dish is much more fun than the eaten-it-a-gazillion-times lemon-and-herb version. It goes well with spinach sauteed with olive oil, garlic and fish sauce. Serves two.

>> 4 cloves roasted garlic, crushed
>> 1 tablespoon fresh ginger, chopped
>> 1/2 teaspoon cayenne pepper
>> 1 tablespoon olive oil
>> 1 tablespoon whole grain mustard
>> 2 tablespoons fresh lime juice
>> A splash of fish sauce
>> Salt and pepper to taste
>> 1 pound fresh salmon

1) Grind garlic, ginger and olive oil together with a mortar and pestle. Mix garlic and ginger mixture with cayenne pepper, mustard, lime juice, fish sauce, and salt and pepper.

2) Place salmon in a foil-lined baking dish, and slather on the paste. Bake in a 400-degree oven for 25 minutes, or until fish is flaky. Serve over rice.
